Amuse Bouche: Blackberry Pie

 I am surrounded by blackberry bushes in my neighborhood. On hot summer days they fill the apartment with a fragrant summer sweetness. When my friend Crystal suggested we go berry picking, little did we know there would be such a delicious result!

Pie crust:
2 1/4 cups flour
1/2 cup (1 stick) butter
1 tsp salt
1 to 3 tsp cold water
The easiest way to mix the dough is to pop all ingredients into a processor. Or you could chop the butter to bits, and then hand mix the mixture until it resembles large granules. Form into a ball, and pop in the fridge. You want to handle the dough as little as possible: the less the butter melts, the flakier the crust! After about 15-20 minutes remove the dough and roll out onto a floured surface. Roll out until about 1/8in thin (which is "bakery" for until it looks good) and line the pie pan.

For the filling:
Rinse the fruit
Mix in 1/2 cup of sugar, along with 2 tbsp cornstarch, or tapioca flour. Let sit for while your dough firms (about 30 min)

Bake at 425F for 35-45 minutes.
